Thanks to my grandma I have discovered the easy and most amazing way to make rasam rice and sambar rice in the pressure cooker.. It is basically a 1 pot dish & while the rice is cooking, I make a simple veggie dish and lunch is ready!

What I was doing earlier was  – putting all the ingredients, including tamarind in the pressure cooker along with rice and letting it took for 15-20 minutes..  It did taste good and came out well but the Daal was never fully cooked [it still held its shape & I like my daal mushy in these dishes].. When I mentioned this,  grandma had an advice-  she suggested I put all ingredients, minus the tamarind into the pressure cooker and leave it for 15-20 minutes/ 2-3whistles.

For the tamarind- I soak it in hot water for a couple of minutes.
Make a paste, dilute it and let it come to a boil in a pan separately.
Then when the pressure cooker is ready to be opened, add the tamarind water to that and let it just come to a boil, add water if you feel the consistency is too thick or you like it watery…

Oh my God, I cannot tell you how amazing it turned out! This works for both Rasam and sambar… You can add veggies to the dishes as well.
